Chillingtons is classy, elegant and deliciously glamorous and the food lives up to its reputation for 'fine dining.’ Acclaimed for its wonderful sea food dishes including oysters, mussels and fresh local fish, it now boasts a sushi bar, prime cut-steaks and locally sourced dishes all recently added to their new season menu.  New too is the chance to savour the delicate delights at lunchtime with delicious snacks including Alaskan Crab Cakes, Sushi Rolls and assorted Mediterranean Bruschetta.  Prices are very reasonable.

The lintv team was recently invited to try the enhanced menu.  Having eaten at Chillingtons before, we opted to sample a selection from the new a la carte menu created by the restaurant's internationally acclaimed chef recently arrived from Singapore.

Parking is plentiful and arriving at the restaurant is a glamorous affair in itself.  A Grecian fountain sets the romantic mood which is refined but relaxed and 'chilled' at the same time. As we were shown to our table bedecked with bespoke dining ware and starched ruby red and butter cream linen, the staff were professional, engaging and attentive without being over-bearing.  Think LA or even Nice for the kind of service and attention to detail the restaurant now offers.

The wine menu features quality local and international wines and the Maitre d will also offer special recommendations for wines imported for their special merit that month.

 We took his advice and opted for a classic Italian dry white Bianco Vergine Val di Chiana smooth and light and a good choice for fish.

We started with the Alaskan Crab Cake with mango relish.  Presented as a work of art on a designer plate, the taste of the crab and crunchy crust were delightful.  The sweet sharp tangs of the mango relish worked well with the crab. The second starter was a Chilled Avocado Smoothie ladled onto a base of finely chopped tomatoes which created a sensuous texture. A dash of salsa and a lemon and olive oil ice cube added the finishing touches to this light and refreshing entrée.

We both wanted to sample fish dishes so opted for the fresh Sea Bass with a Roasted Sesame Seed and Peanut Crust and a lemon confit beurre blanc. Served with a melee of local potato, vine tomatoes and spinach, it was delicate yet satisfying as a main course. Also light and tasty was the Pan-Fried Salmon with steamed basmati rice and served on a black bean ginger sauce. The combination of flavours was exquisite and so was its presentation.

The olive oil used for cooking is especially sourced from Liguiria, Italy. Terre Bormane is famous for its virgin olive oil. The delicacy of many of the restaurant's new dishes is enhanced by this oil’s pure quality.

We took our time between the mains and dessert to enjoy the honeyed tones of talented singer and saxophonist Maria who smoothly entertains most nights at the restaurant.

To be honest, we couldn’t decide on which of the sumptuous sweets to sample. Once again the staff came to our rescue and offered us a mini-portion of each dessert. Well, we couldn’t say no, could we? It was obvious the chef takes particular delight in preparing the deserts when we saw the sophisticated selection arrive before us. 

Firstly, we were treated to an offering of fine French and Italian cheese served with a honeyed fig puree. Then followed a sumptuously sweet selection - out of the ordinary and with their own unique touches. The Pavlova surprised with its pistachio cream and fresh berry filling which worked exquisitely with the meringue's light but crunchy texture. And the ricotta cheesecake was lightly flavoured with Limoncello, an Italian liqueur. The Tiramisu, Crème Brûlée and Crunchy Nut Chocolate Cake also on the dessert menu all contained

the Chillingtons’ creative trademark touch. The Tiramisu, for instance, is made with Baileys. Dessert made in heaven.

The 'From the Sea' menu is still as impressive as ever, with signature dish Fine de Claire oysters with three salsa sauce and 'fruits de mer' dishes with lobster, prawns, clams or crabs cooked to your preference either boiled, steamed, grilled, fried, roasted or pan roasted.

Chillingtons is an extravagant dining experience and with its new menu looks set to become the jewel in the Paphos restaurant crown. Ideal for weddings, private dining and corporate events, Chillingtons is a place to visit for that very special occasion.  With the lunchtime snack menu on offer too, why wait until the evening to chill out at Chillingtons?
